Gochujang-Swirl Macadamia Blondies

A sweet and spicy twist on the classic blondie, featuring a rich, buttery macadamia nut base topped with a 'deviled' swirl of fermented Korean chili paste and brown sugar.

    Prepare the 'deviled' swirl mixture by mixing 2 tablespoons of brown sugar, 1 tablespoon of room temperature butter, and 1 tablespoon of gochujang together until a smooth paste forms. Set aside at room temperature.

    In a small bowl, whisk together the all-purpose flour, salt, and baking powder until evenly combined. Prep a 9x9-inch cake pan by greasing it and lining the bottom with a square of buttered parchment paper.

    In a larger mixing bowl, combine the white sugar, brown sugar, eggs, and vanilla extract. Use a whisk or electric hand mixer to beat the mixture until it is thick, smooth, and pale.

    Pour the cooled melted butter into the sugar-egg mixture and blend until fully emulsified. Add the macadamia nuts and the flour mixture, then use a spatula to gently fold everything together just until the flour disappears.

    Transfer the thick batter into the prepared pan. Use a spatula to push the batter from the center into the corners and smooth out the top into a perfectly uniform layer.

    Dollop 12 small spoonfuls of the gochujang paste onto the surface of the batter. Use the tip of a knife to swirl the paste into the batter, creating an abstract flame-like design. Tap the pan firmly on the counter to settle the batter.

    Bake in a preheated 350°F (175°C) oven for 30 to 35 minutes. Test for doneness by inserting a skewer into a light-colored part of the batter; it should come out clean. Let cool completely in the pan before cutting. For the best texture, refrigerate before serving.

  • As I so often do to make this a little more exciting and much much more difficult, I used a nice small bowl.
  • They say one of the first things you notice when you get to hell is all the goatees.
  • I went with this sort of abstract fires of hell design or as they call it in the brochure, the flames of eternal damnation.
