Three-Cheese Ham Involtini

A clever, low-carb twist on cannelloni using thinly sliced smoked ham to wrap a rich, herb-flecked three-cheese filling, served over a bed of savory sautéed mushrooms and peppers.

    Heat olive oil in a skillet over medium-high heat. Add sliced mushrooms and diced onions with a pinch of salt. Cook, stirring occasionally, for about 5 minutes or until the onions are translucent and the mushrooms begin to brown.

    Clear a space in the center of the pan and add minced garlic. Sizzle for 30 seconds, then stir in the red bell peppers. Season with black pepper and cayenne, and cook for another 2 minutes until the peppers just begin to soften.

    Transfer the vegetable mixture into a small baking dish, spreading it out into an even layer. Use the smallest dish that will fit the ingredients to help retain moisture.

    In a mixing bowl, combine the ricotta, Parmesan, half of the Monterey Jack, salt, pepper, fresh nutmeg, parsley, and optional oregano. Mix thoroughly until the cheese filling is well combined.

    Lay out the ham slices and place about one-fourth of the cheese mixture onto each. Roll the ham around the filling into a log shape, leaving about an inch of space at the ends to prevent leakage.

    Place the ham rolls on top of the vegetables in the baking dish. Sprinkle the remaining Monterey Jack over the top. Bake in a preheated 400°F (200°C) oven for 25 to 30 minutes, or until the cheese is melted and the filling is heated through.
