Baked Buffalo Bison Dip

A meat-forward alternative to the classic chicken dip, featuring lean ground bison browned until crusty, mixed with a trio of cheeses and plenty of hot sauce.

    Melt butter in a skillet over high heat. Add the ground bison, season with salt and pepper, and cook until the meat is very well-browned and crusty, breaking it into very small pieces with a spatula as it browns.

    Reduce the heat to medium and stir in the diced onions. Cook for 3 to 4 minutes, or until the onions turn translucent and soften.

    Pour in a generous amount of hot sauce and stir to combine. Turn off the heat and allow the meat mixture to cool down for several minutes.

    In a large bowl, combine the softened cream cheese, grated Jack cheese, and crumbled blue cheese. Add the cooled meat mixture and the diced celery. Mix thoroughly until no large chunks of cream cheese are visible.

    Transfer the mixture to a baking dish, packing it down and smoothing the top. Sprinkle with the reserved Jack and blue cheeses and a light dusting of cayenne pepper.
