Anchovy & Caramelized Onion Pissaladière

A savory southern French classic, this cheese-less flatbread features a thick layer of jammy caramelized onions, briny Kalamata olives, and a lattice of salt-cured anchovies.

    Slice onions across the fibers into thin half-moons. Melt butter and olive oil in a large pot over medium-high heat. Add onions and a pinch of salt. Sauté until they soften and slump down.

    Reduce heat to medium, cover, and cook for 10 minutes. Uncover and continue cooking on medium-low, stirring occasionally, until light golden brown. Stir in thyme bundle, pepper, 2-3 anchovies, and sherry vinegar. Cook for 10 more minutes until jammy; set aside to cool.

    Drain the remaining anchovies and soak them in a bowl of fresh cold water for 1 hour to remove excess salt. Drain and pat dry on paper towels before using.

    Roll out pizza dough between two sheets of oiled parchment paper until thin and even. Transfer to a baking sheet and remove the top layer of parchment. Dock the dough by pricking it all over with a fork.

    Pre-bake the crust in a 450°F (230°C) oven for 10 minutes until barely golden. Remove and let cool. Brush the edges with olive oil and spread the caramelized onions in a thick, even layer over the surface.

    Arrange the soaked anchovies in a diagonal lattice pattern over the onions. Place a halved olive in each diamond opening. Bake in the upper center of a 450°F oven for 25 minutes until the crust is browned and onions are dark.

    Transfer the flatbread to a cooling rack. Garnish with snipped fresh chives. Let sit for a few minutes before slicing into squares with a pizza wheel.
