Baked Yogurt Custard Toast

A viral TikTok trend perfected by Chef John, this dish features thick-cut bread with an open crumb topped with a tangy, honey-sweetened Greek yogurt custard. Once baked, it develops a texture reminiscent of a classic cheese danish with a crisp, buttery base.

Method

  1. 01

Preheat your oven to 400°F (200°C). Slice your bread into 3/4 to 1-inch thick pieces and butter one side (the bottom) very generously. Place the bread buttered-side down on a lined baking sheet. Do not butter the tops.

  2. 02

Inspect the bread for large holes that go all the way through to the pan. Use small scraps from the end of the loaf to pinch off pieces and plug those holes to prevent the custard from leaking out.

In a small bowl, combine the Greek yogurt, honey, vanilla extract, lemon zest, egg, and a pinch of salt. Whisk enthusiastically for about one minute until the mixture is completely smooth and thoroughly combined.

Carefully spoon the custard onto the top of each bread slice, spreading it all the way to the edges. Press down slightly with the spoon to help the custard penetrate the nooks and crannies. For best results, let the bread sit for 15–20 minutes to allow the custard to soak in before baking.

Bake in the center of the preheated oven for about 25 minutes, or until the custard is set and the edges of the toast are beautifully browned and crisp.

While the toast bakes, toss fresh berries with a little maple syrup and lemon juice. Spoon the fruit over the warm toast and garnish with extra lemon zest before serving.

  • The overall effect is very delicious and more than satisfying enough.
