Add all-purpose flour to the egg white mixture. Whisk slowly at first to avoid a mess, then more aggressively until a very thin and completely smooth batter forms.

- 03
Add a generous amount of black sesame seeds to the batter and fold them in using a spatula until evenly distributed.

- 04
Transfer the batter onto a baking sheet lined with a silicone mat. Use a spatula to spread the mixture into a very thin, even layer. Tap the pan firmly against the counter (the 'tapatapa') to settle and flatten the batter.

- 05
Bake in the center of a 350°F (175°C) oven for approximately 20 minutes, or until the edges are lightly browned and the surface appears set.

- 06
Remove from the oven and slide the silicone mat off the pan to cool completely. Once the crisp has hardened, peel it off the mat and break it into irregular, bite-sized pieces.

From Chef John
“Cayenne or as it's also known the devil spice.”
“Give this the whole tapatapa just to settle that batter down.”
“It's a proven scientific fact that people do not make their own crackers, but crisps on the other hand—oh yeah, people will make a crisp.”
