Place diced bacon in a cold skillet and set heat to medium. Cook until the fat renders and the bacon becomes foamy and crispy. Remove to a paper towel-lined plate to drain, but do not wipe out the pan.

Increase heat to medium-high. Sauté the diced onions in the bacon fat with a pinch of salt for 3–4 minutes. Add the ground beef and cook, breaking it into small crumbles, until browned. Season with kosher salt, black pepper, cayenne, and Worcestershire sauce. Continue cooking until the moisture evaporates and the pan is dry.

  3. 03

Turn off the heat. Stir the cooked bacon back into the beef mixture along with the Dijon mustard, ketchup, and half of the grated cheddar cheese. Allow the filling to cool to room temperature before using.

  4. 04

On a floured surface, roll out the pizza dough into a roughly 10x15-inch rectangle. Spread the cooled beef filling evenly over the dough, leaving a 1-inch border on the sides and bottom, and a 3-inch border at the top edge. Sprinkle with chopped pickles, green onions, and the remaining cheese.

Moisten the far top edge of the dough with water. Fold the side edges inward to seal the ends, then roll the dough up tightly from the bottom. Ensure the side seams stay tucked in and finish with the main seam on the bottom.

From Chef John

  • You are after all the chef Johnny Cash of this edible trash.
  • It is absolutely perfect for when you're having a party and also when you're not having a party.
  • Do not wipe out the pan since we're going to put that back on medium high heat.
